Ingredients

  • White fish fillets (e.g., cod or halibut) - 400 grams
  • Olive oil - 4 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Zest of 1 lemon
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a mixing bowl, combine olive oil, cilantro, parsley, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, lemon zest, and red chili flakes (if using) to create the charmoula marinade.
  2. Place the fish fillets in a shallow dish and pour the charmoula marinade over the fish, ensuring it is well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Remove the fish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
  5. Serve the grilled fish charmoula hot, garnished with additional fresh herbs and lemon wedges, if desired.
