Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bell peppers (mixed colors) - 1 cup, cut into squares
  • Red onion - 1 small, cut into squares
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Cut the fish fillets into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix together the olive oil, lemon juice, minced garlic, cumin, paprika, coriander powder, salt, and black pepper to create a marinade.
  3. Pour the marinade over the fish cubes and gently toss to coat. Let it marinate for at least 15 minutes.
  4. While the fish is marinating, prepare the vegetables by cutting the bell peppers and red onion into squares.
  5. After marinating, thread the fish cubes, bell peppers, and red onion onto the skewers, alternating between them.
  6. Preheat the grill or a grill pan over medium-high heat.
  7. Grill the skewers for about 8-10 minutes, turning occasionally, until the fish is cooked through and the vegetables are slightly charred.
  8. Remove the skewers from the grill and sprinkle with chopped fresh parsley before serving.
