Ingredients

  • all-purpose flour - 150 grams
  • warm water - 100 ml
  • instant yeast - 5 grams
  • olive oil - 15 ml
  • salt - 3 grams
  • fresh spinach - 100 grams
  • feta cheese - 100 grams
  • garlic - 2 cloves, minced
  • ground cumin - 1 teaspoon
  • black pepper - to taste
  • paprika - 1 teaspoon
  • fresh parsley - 10 grams, chopped
  • lemon zest - from 1 lemon

Steps

  1. In a bowl, mix the warm water, instant yeast, and olive oil. Let it sit for 5 minutes until frothy.
  2. In a separate bowl, combine the all-purpose flour and salt. Gradually add the yeast mixture to the flour and knead until a smooth dough forms.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, heat a pan over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  5. Add the fresh spinach to the pan, along with the ground cumin, paprika, black pepper, and lemon zest. Cook until the spinach is wilted. Remove from heat and let it cool slightly.
  6. Preheat the oven to 220°C (425°F).
  7. Once the dough has risen, roll it out on a floured surface to a 25 cm diameter circle.
  8. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  9. Spread the sautéed spinach mixture evenly over the dough, then crumble the feta cheese on top.
  10. Sprinkle the chopped fresh parsley over the pizza.
  11. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  12. Remove from the oven, let it cool for a few minutes, then slice and serve.
