- Water - 120 ml
- Olive oil - 2 tablespoons
- Instant yeast - 5 grams
- Salt - 1 teaspoon
- Feta cheese - 100 grams, crumbled
- Fresh mint leaves - 20 grams, chopped
- Garlic - 1 clove, minced
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- In a mixing bowl, combine the flour, instant yeast, and salt.
- Gradually add warm water and 1 tablespoon of olive oil to the flour mixture, stirring until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Cover the dough with a clean kitchen towel and let it rise in a warm place for 15 minutes.
- While the dough is rising, mix the crumbled feta, chopped mint, minced garlic, black pepper, and paprika in a bowl to create the topping.
- After the dough has risen, divide it into two equal portions and roll each portion into a flat disc about 1 cm thick.
- Heat a non-stick skillet over medium heat and add the remaining tablespoon of olive oil.
- Cook each flatbread for about 3-4 minutes on each side until golden brown and cooked through.
- Once cooked, remove the flatbreads from the skillet and top each with the feta and mint mixture while still warm.
- Serve immediately, garnished with extra mint if desired.
