Ingredients
- All-purpose flour - 150 grams
- Olive oil - 60 ml
- Water - 60 ml
- Salt - 1/2 teaspoon
- Fennel bulb - 1 medium, thinly sliced
- Oranges - 2, segmented
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, toasted
Steps
- In a mixing bowl, combine the all-purpose flour and salt, then mix in the olive oil until crumbly.
- Gradually add the water, mixing until a dough forms. Knead gently for about 2 minutes, then wrap in plastic wrap and refrigerate for 20 minutes.
- Preheat your oven to 200°C (400°F).
- Roll out the chilled dough on a floured surface to fit a tart pan, then transfer to the pan and press into the edges. Prick the bottom with a fork.
- In a skillet over medium heat, sauté the sliced fennel in a little olive oil for about 5 minutes until softened. Season with cumin, coriander, black pepper, and half of the parsley.
- Spread the fennel mixture evenly over the tart crust, then arrange the orange segments on top.
- Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
- Remove from the oven and sprinkle with toasted sesame seeds and the remaining parsley before serving.
