- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Fennel bulb - 1 medium, thinly sliced
- Carrots - 2 medium, grated
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - 15 grams, chopped
- Feta cheese - 50 grams, crumbled
- Black pepper - to taste
Steps
- In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise for 30 minutes in a warm place.
- Meanwhile, preheat the oven to 220°C (428°F).
- In a skillet, heat a little olive oil over medium heat. Add the sliced fennel and grated carrots, sauté for about 5 minutes until they start to soften.
- Add minced garlic, cumin, paprika, and black pepper to the skillet, and cook for another 2-3 minutes, stirring occasionally.
- Once the dough has risen, roll it out on a floured surface to fit a baking sheet or pizza stone.
- Transfer the rolled-out dough to the baking sheet, then spread the fennel and carrot mixture evenly over the surface.
- Sprinkle crumbled feta cheese and chopped parsley on top.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, let it cool slightly, slice, and serve.
