Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Fennel bulb - 1 medium, thinly sliced
  • Carrots - 2 medium, grated
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 15 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise for 30 minutes in a warm place.
  4. Meanwhile, preheat the oven to 220°C (428°F).
  5. In a skillet, heat a little olive oil over medium heat. Add the sliced fennel and grated carrots, sauté for about 5 minutes until they start to soften.
  6. Add minced garlic, cumin, paprika, and black pepper to the skillet, and cook for another 2-3 minutes, stirring occasionally.
  7. Once the dough has risen, roll it out on a floured surface to fit a baking sheet or pizza stone.
  8. Transfer the rolled-out dough to the baking sheet, then spread the fennel and carrot mixture evenly over the surface.
  9. Sprinkle crumbled feta cheese and chopped parsley on top.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  11. Remove from the oven, let it cool slightly, slice, and serve.
