Ingredients
- Bell peppers - 2 large (any color)
- Ground lamb - 200 grams
- Cooked rice - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Tomato paste - 2 tablespoons
- Water - 200 ml
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes, setting the tops aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
- In a mixing bowl, combine ground lamb, cooked rice, sautéed onion and garlic, chopped parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
- Stuff each bell pepper with the meat and rice mixture, packing it tightly. Replace the tops of the peppers.
- In the same skillet, add the remaining olive oil and tomato paste, stirring to combine. Pour in the water and bring to a simmer.
- Place the stuffed peppers in a baking dish and pour the tomato sauce around them. Cover the dish with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Serve warm, drizzled with the tomato sauce from the baking dish.
