Ingredients

  • Bell peppers - 2 large (any color)
  • Ground lamb - 200 grams
  • Cooked rice - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato paste - 2 tablespoons
  • Water - 200 ml

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes, setting the tops aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  4. In a mixing bowl, combine ground lamb, cooked rice, sautéed onion and garlic, chopped parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
  5. Stuff each bell pepper with the meat and rice mixture, packing it tightly. Replace the tops of the peppers.
  6. In the same skillet, add the remaining olive oil and tomato paste, stirring to combine. Pour in the water and bring to a simmer.
  7. Place the stuffed peppers in a baking dish and pour the tomato sauce around them. Cover the dish with aluminum foil.
  8. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
  9. Serve warm, drizzled with the tomato sauce from the baking dish.
