- Cilantro - 30 grams (chopped)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 3 tablespoons
- Olive oil - 2 tablespoons (for cooking)
- Whole wheat burger buns - 2
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
- Lettuce - 2 leaves
- Tahini - 2 tablespoons (for sauce)
- Lemon juice - 1 tablespoon (for sauce)
- Water - 1 tablespoon (for sauce)
Steps
- In a mixing bowl, mash the cooked fava beans with a fork until mostly smooth but with some texture.
- Add the chopped red onion, minced garlic, chopped cilantro, cumin powder, coriander powder, paprika, salt, and black pepper to the mashed fava beans. Mix well to combine.
- Stir in the chickpea flour until the mixture holds together without being too wet. If too sticky, add a little more flour.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
- While the burgers are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and water in a small bowl until smooth. Adjust with more water if necessary.
- Toast the whole wheat burger buns in the skillet for a minute or until golden.
- Assemble the burgers by placing a patty on each bun, topping with lettuce, tomato, cucumber, and drizzling with tahini sauce.
