  • Fava beans - 200 grams (cooked and peeled)
  • Red onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 30 grams (chopped)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 3 tablespoons
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Tomato - 1 (sliced)
  • Cucumber - 1/2 (sliced)
  • Lettuce - 2 leaves
  • Tahini - 2 tablespoons (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Water - 1 tablespoon (for sauce)

Steps

  1. In a mixing bowl, mash the cooked fava beans with a fork until mostly smooth but with some texture.
  2. Add the chopped red onion, minced garlic, chopped cilantro, cumin powder, coriander powder, paprika, salt, and black pepper to the mashed fava beans. Mix well to combine.
  3. Stir in the chickpea flour until the mixture holds together without being too wet. If too sticky, add a little more flour.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
  6. While the burgers are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and water in a small bowl until smooth. Adjust with more water if necessary.
  7. Toast the whole wheat burger buns in the skillet for a minute or until golden.
  8. Assemble the burgers by placing a patty on each bun, topping with lettuce, tomato, cucumber, and drizzling with tahini sauce.
