- Romaine lettuce - 100 grams, chopped
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Radishes - 50 grams, thinly sliced
- Bell pepper (any color) - 1 small, diced
- Green onion - 2 stalks, chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 20 grams, chopped
- Pita bread - 1 medium, cut into triangles
- Olive oil - 2 tablespoons
- Lemon - 1 medium, juiced
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F) to toast the pita bread.
- Spread the pita triangles on a baking sheet and drizzle with 1 tablespoon of olive oil, tossing to coat. Bake in the oven for about 10 minutes or until golden and crispy.
- While the pita is toasting, prepare the salad by combining the chopped romaine lettuce, diced cucumber, tomato, radishes, bell pepper, green onion, parsley, and mint in a large mixing bowl.
- In a small bowl, whisk together the lemon juice, remaining olive oil, sumac, salt, and black pepper to create the dressing.
- Once the pita is ready, remove it from the oven and let it cool slightly. Add the toasted pita to the salad mixture.
- Drizzle the dressing over the salad and gently toss everything together until well combined.
- Serve immediately, garnished with extra herbs if desired.
