Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Chickpeas - 200 grams, canned, drained and rinsed
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic, carrot, and celery, and cook for another 5 minutes until the vegetables soften.
  4. Add the zucchini and tomato, cooking for an additional 3-4 minutes.
  5. Stir in the chickpeas, vegetable broth, cumin, cinnamon, paprika, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
  7. Remove from heat and stir in the fresh parsley and lemon juice.
  8. Serve hot, garnished with extra parsley if desired.
