- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Chickpeas - 200 grams, canned, drained and rinsed
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, carrot, and celery, and cook for another 5 minutes until the vegetables soften.
- Add the zucchini and tomato, cooking for an additional 3-4 minutes.
- Stir in the chickpeas, vegetable broth, cumin, cinnamon, paprika, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
- Remove from heat and stir in the fresh parsley and lemon juice.
- Serve hot, garnished with extra parsley if desired.
