- Lemon - 1, juiced
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cooking for another minute until fragrant.
- Add the chicken thighs to the skillet, browning them on both sides for about 5-7 minutes.
- Sprinkle in the cumin, cinnamon, ginger, turmeric, salt, and black pepper, stirring to coat the chicken evenly.
- Pour in the chicken broth and add the chopped dried apricots.
- Bring the mixture to a simmer, cover the skillet, and reduce the heat to low. Cook for 25 minutes until the chicken is tender.
- Remove the lid, increase the heat, and let the sauce reduce for an additional 5 minutes.
- Stir in the lemon juice and sliced almonds, cooking for another 2 minutes.
- Serve hot, garnished with fresh cilantro.
