  • Ground ginger - 1 teaspoon

  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250ml
  • Dried apricots - 100g, chopped
  • Almonds - 50g, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cooking for another minute until fragrant.
  4. Add the chicken thighs to the skillet, browning them on both sides for about 5-7 minutes.
  5. Sprinkle in the cumin, cinnamon, ginger, turmeric, salt, and black pepper, stirring to coat the chicken evenly.
  6. Pour in the chicken broth and add the chopped dried apricots.
  7. Bring the mixture to a simmer, cover the skillet, and reduce the heat to low. Cook for 25 minutes until the chicken is tender.
  8. Remove the lid, increase the heat, and let the sauce reduce for an additional 5 minutes.
  9. Stir in the lemon juice and sliced almonds, cooking for another 2 minutes.
  10. Serve hot, garnished with fresh cilantro.
