Ingredients

  • Pizza Dough - 200 grams
  • Eggplant - 1 medium-sized (about 250 grams)
  • Tomato - 2 medium-sized (about 200 grams)
  • Garlic - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Bell pepper - 1 small (sliced)
  • Red onion - 1 small (sliced)
  • Olives - 50 grams (pitted and sliced)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Slice the eggplant into thin rounds, sprinkle with salt, and let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with a paper towel.
  4. Heat 1 tablespoon of olive oil in a pan over medium heat, add minced garlic, and sauté for 1 minute.
  5. Add the eggplant to the pan and cook for about 5-7 minutes until soft and golden brown. Stir in cumin, paprika, salt, and black pepper, and cook for another 2 minutes.
  6. Chop the tomatoes and add them to the pan, cooking until they break down and form a sauce (about 5 minutes). Stir in the chopped cilantro and remove from heat.
  7. Roll out the pizza dough on a floured surface into a 10-inch round and transfer it to a baking sheet lined with parchment paper.
  8. Spread the eggplant zaalouk mixture evenly over the pizza base.
  9. Top with sliced bell pepper, red onion, and olives.
  10. Drizzle the remaining tablespoon of olive oil over the top and bake in the preheated oven for 15-20 minutes until the crust is golden.
  11. Remove from the oven, let cool for a few minutes, slice, and enjoy!
