- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons (chopped)
- Bell pepper - 1 small (sliced)
- Red onion - 1 small (sliced)
- Olives - 50 grams (pitted and sliced)
Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into thin rounds, sprinkle with salt, and let it sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry with a paper towel.
- Heat 1 tablespoon of olive oil in a pan over medium heat, add minced garlic, and sauté for 1 minute.
- Add the eggplant to the pan and cook for about 5-7 minutes until soft and golden brown. Stir in cumin, paprika, salt, and black pepper, and cook for another 2 minutes.
- Chop the tomatoes and add them to the pan, cooking until they break down and form a sauce (about 5 minutes). Stir in the chopped cilantro and remove from heat.
- Roll out the pizza dough on a floured surface into a 10-inch round and transfer it to a baking sheet lined with parchment paper.
- Spread the eggplant zaalouk mixture evenly over the pizza base.
- Top with sliced bell pepper, red onion, and olives.
- Drizzle the remaining tablespoon of olive oil over the top and bake in the preheated oven for 15-20 minutes until the crust is golden.
- Remove from the oven, let cool for a few minutes, slice, and enjoy!
