Ingredients

  • Eggplant - 1 medium (about 250g)
  • Tomatoes - 2 medium (about 300g), chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant in half lengthwise and score the flesh in a crisscross pattern. Drizzle with 1 tablespoon of olive oil and sprinkle with salt.
  3. Place the eggplant halves on a baking sheet, cut side up, and roast in the oven for about 25 minutes, or until the flesh is soft and slightly caramelized.
  4. While the eggplant is roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the chopped tomatoes, cumin, paprika, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the tomatoes have broken down into a sauce.
  6. Once the eggplant is roasted, remove it from the oven and let it cool slightly. Use a spoon to scoop the flesh out of the skin and add it to the skillet with the tomato mixture.
  7. Mash the eggplant into the tomato sauce using a fork or potato masher until well combined. Cook for an additional 5 minutes to blend the flavors.
  8. Remove from heat, stir in the lemon juice, and adjust seasoning if necessary. Serve warm or at room temperature, garnished with chopped cilantro.
