Ingredients
- Eggplant - 1 medium (about 250g)
- Tomatoes - 2 medium (about 300g), chopped
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant in half lengthwise and score the flesh in a crisscross pattern. Drizzle with 1 tablespoon of olive oil and sprinkle with salt.
- Place the eggplant halves on a baking sheet, cut side up, and roast in the oven for about 25 minutes, or until the flesh is soft and slightly caramelized.
- While the eggplant is roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped tomatoes, cumin, paprika, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the tomatoes have broken down into a sauce.
- Once the eggplant is roasted, remove it from the oven and let it cool slightly. Use a spoon to scoop the flesh out of the skin and add it to the skillet with the tomato mixture.
- Mash the eggplant into the tomato sauce using a fork or potato masher until well combined. Cook for an additional 5 minutes to blend the flavors.
- Remove from heat, stir in the lemon juice, and adjust seasoning if necessary. Serve warm or at room temperature, garnished with chopped cilantro.
