Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into thin rounds and sprinkle with salt. Let it sit for about 15 minutes to draw out moisture, then rinse and pat dry.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, and paprika to the onion, and cook for an additional 2 minutes until fragrant.
- Add the eggplant slices to the skillet and cook for about 8-10 minutes, stirring occasionally, until they are tender and slightly browned. Add the cooked chickpeas and season with salt and pepper to taste. Remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet or pizza stone.
- Spread the tomato sauce evenly over the pizza dough, leaving a small border around the edges.
- Top the sauce with the eggplant and chickpea mixture, spreading it evenly across the pizza.
