- Medium eggplant - 1
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Fresh tomatoes, diced - 1 cup
- Red bell pepper, diced - 1/2
- Red onion, thinly sliced - 1/2
- Feta cheese, crumbled - 75 grams
- Fresh parsley, chopped - 2 tablespoons
- Fresh mint, chopped - 2 tablespoons
- Black olives, pitted and sliced - 50 grams
- Tzatziki sauce - for serving (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
- Drizzle the eggplant slices with olive oil, and sprinkle with salt, cumin, coriander, paprika, and garlic powder. Toss to coat evenly.
- Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through until they are tender and slightly golden.
- While the eggplant is roasting, prepare the topping by mixing the diced tomatoes, red bell pepper, red onion, feta cheese, parsley, mint, and black olives in a bowl.
- Once the eggplant is done, remove it from the oven and top each slice with the vegetable mixture.
- Return the topped eggplant to the oven and bake for an additional 10 minutes.
- Serve hot with a dollop of tzatziki sauce if desired.
