Ingredients

  • Medium eggplant - 1
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Fresh tomatoes, diced - 1 cup
  • Red bell pepper, diced - 1/2
  • Red onion, thinly sliced - 1/2
  • Feta cheese, crumbled - 75 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh mint, chopped - 2 tablespoons
  • Black olives, pitted and sliced - 50 grams
  • Tzatziki sauce - for serving (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
  3. Drizzle the eggplant slices with olive oil, and sprinkle with salt, cumin, coriander, paprika, and garlic powder. Toss to coat evenly.
  4. Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through until they are tender and slightly golden.
  5. While the eggplant is roasting, prepare the topping by mixing the diced tomatoes, red bell pepper, red onion, feta cheese, parsley, mint, and black olives in a bowl.
  6. Once the eggplant is done, remove it from the oven and top each slice with the vegetable mixture.
  7. Return the topped eggplant to the oven and bake for an additional 10 minutes.
  8. Serve hot with a dollop of tzatziki sauce if desired.
