- Eggplant - 2 medium
- Olive oil - 4 tablespoons
- Red onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chickpeas - 1 cup, cooked
- Dried apricots - 1/4 cup, chopped
- Almonds - 1/4 cup, toasted and roughly chopped
- Fresh parsley - 1/4 cup, chopped
- Lemon - 1, juiced
Steps
- Preheat your grill or barbecue to medium-high heat.
- Slice the eggplants in half lengthwise and score the flesh with a knife in a crisscross pattern.
- Brush the cut sides of the eggplants with 2 tablespoons of olive oil and sprinkle with salt and pepper.
- Grill the eggplants cut side down for about 15-20 minutes, or until tender and charred. Remove from the grill and set aside.
- In a skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, cinnamon, paprika, coriander, salt, and black pepper. Cook for another 2 minutes until fragrant.
- Add the cooked chickpeas and chopped dried apricots to the skillet. Stir well to combine and cook for 5 more minutes, allowing the flavors to meld.
- Spoon the chickpea mixture generously into the grilled eggplant halves.
- Top with the toasted almonds, fresh parsley, and a squeeze of lemon juice before serving.
