Ingredients

  • Eggplant - 2 medium
  • Olive oil - 4 tablespoons
  • Red onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chickpeas - 1 cup, cooked
  • Dried apricots - 1/4 cup, chopped
  • Almonds - 1/4 cup, toasted and roughly chopped
  • Fresh parsley - 1/4 cup, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat your grill or barbecue to medium-high heat.
  2. Slice the eggplants in half lengthwise and score the flesh with a knife in a crisscross pattern.
  3. Brush the cut sides of the eggplants with 2 tablespoons of olive oil and sprinkle with salt and pepper.
  4. Grill the eggplants cut side down for about 15-20 minutes, or until tender and charred. Remove from the grill and set aside.
  5. In a skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  6. Stir in the minced garlic, cumin, cinnamon, paprika, coriander, salt, and black pepper. Cook for another 2 minutes until fragrant.
  7. Add the cooked chickpeas and chopped dried apricots to the skillet. Stir well to combine and cook for 5 more minutes, allowing the flavors to meld.
  8. Spoon the chickpea mixture generously into the grilled eggplant halves.
  9. Top with the toasted almonds, fresh parsley, and a squeeze of lemon juice before serving.
