Ingredients

  • Eggplant - 1 medium
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Merguez sausage - 200 grams, casing removed
  • Shredded mozzarella cheese - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/2 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Slice the eggplant into 1 cm thick rounds. Sprinkle both sides with salt and let them sit for 10 minutes to draw out moisture.
  3. Rinse the salted eggplant slices under cold water and pat dry with paper towels.
  4. In a bowl, mix olive oil, cumin, coriander, paprika, and black pepper. Brush this mixture on both sides of the eggplant slices.
  5. Place the eggplant slices on a baking sheet lined with parchment paper and bake for 15 minutes until slightly tender.
  6. While the eggplant is baking, cook the merguez sausage in a skillet over medium heat until browned and cooked through, breaking it up into smaller pieces.
  7. Remove the eggplant from the oven and layer the cooked merguez sausage, cherry tomatoes, red onion, and shredded mozzarella cheese on top.
  8. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  9. Remove from the oven, sprinkle with fresh parsley, and let cool for a few minutes before slicing.
