Ingredients
- Eggplant - 1 medium
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Merguez sausage - 200 grams, casing removed
- Shredded mozzarella cheese - 100 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 1/2 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 220°C (428°F).
- Slice the eggplant into 1 cm thick rounds. Sprinkle both sides with salt and let them sit for 10 minutes to draw out moisture.
- Rinse the salted eggplant slices under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, cumin, coriander, paprika, and black pepper. Brush this mixture on both sides of the eggplant slices.
- Place the eggplant slices on a baking sheet lined with parchment paper and bake for 15 minutes until slightly tender.
- While the eggplant is baking, cook the merguez sausage in a skillet over medium heat until browned and cooked through, breaking it up into smaller pieces.
- Remove the eggplant from the oven and layer the cooked merguez sausage, cherry tomatoes, red onion, and shredded mozzarella cheese on top.
- Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Remove from the oven, sprinkle with fresh parsley, and let cool for a few minutes before slicing.
