- Eggplant - 1 medium (about 250 grams)

- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Tomato - 1 medium, diced
- Black olives - 50 grams, pitted and sliced
- Red onion - 1 small, thinly sliced
Steps
- In a bowl, combine warm water and yeast, letting it sit for 5 minutes until frothy.
- In a separate mixing bowl, combine flour and salt. Make a well in the center, then add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes.
- While the dough is rising, preheat your oven to 220°C (428°F).
- Slice the eggplant into rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Rinse and pat dry.
- Toss the eggplant with olive oil, minced garlic, zaatar, and lemon juice in a bowl.
- Spread the eggplant mixture onto a baking sheet and roast in the preheated oven for 20 minutes, until tender and slightly charred.
- Once the dough has risen, roll it out to fit a 10-inch pizza pan or baking sheet.
- Transfer the rolled dough to the pan, and layer with roasted eggplant, diced tomato, sliced olives, and red onion.
