Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Eggplant - 1 medium (about 250 grams)
  • Zaatar spice blend - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Black olives - 50 grams, pitted and sliced
  • Red onion - 1 small, thinly sliced

Steps

  1. In a bowl, combine warm water and yeast, letting it sit for 5 minutes until frothy.
  2. In a separate mixing bowl, combine flour and salt. Make a well in the center, then add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes.
  4. While the dough is rising, preheat your oven to 220°C (428°F).
  5. Slice the eggplant into rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Rinse and pat dry.
  6. Toss the eggplant with olive oil, minced garlic, zaatar, and lemon juice in a bowl.
  7. Spread the eggplant mixture onto a baking sheet and roast in the preheated oven for 20 minutes, until tender and slightly charred.
  8. Once the dough has risen, roll it out to fit a 10-inch pizza pan or baking sheet.
  9. Transfer the rolled dough to the pan, and layer with roasted eggplant, diced tomato, sliced olives, and red onion.
  10. Bake for 15-20 minutes until the crust is golden and crispy.
