Ingredients

  • Pizza dough - 250 grams
  • Eggplant - 1 medium (about 250 grams)
  • Tomatoes - 2 medium (about 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a baking sheet lined with parchment paper.
  3. Slice the eggplant into thin rounds, sprinkle with salt, and let it sit for about 10 minutes to draw out moisture.
  4. Rinse the eggplant slices under cold water, pat dry, and brush with 1 tablespoon of olive oil. Spread them evenly on a baking sheet and roast in the oven for about 15 minutes until tender.
  5. While the eggplant is roasting, chop the tomatoes and mix them in a bowl with the minced garlic, cumin, coriander, paprika, salt, and black pepper.
  6. Once the eggplant is done, remove it from the oven and layer the roasted eggplant slices on top of the pizza dough.
  7. Spread the spiced tomato mixture evenly over the eggplant, and if desired, sprinkle vegan cheese on top.
  8. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  9. Remove from the oven, garnish with fresh parsley, slice, and serve hot.
