- Pizza dough - 250 grams
- Eggplant - 1 medium (about 250 grams)
- Tomatoes - 2 medium (about 300 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a baking sheet lined with parchment paper.
- Slice the eggplant into thin rounds, sprinkle with salt, and let it sit for about 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water, pat dry, and brush with 1 tablespoon of olive oil. Spread them evenly on a baking sheet and roast in the oven for about 15 minutes until tender.
- While the eggplant is roasting, chop the tomatoes and mix them in a bowl with the minced garlic, cumin, coriander, paprika, salt, and black pepper.
- Once the eggplant is done, remove it from the oven and layer the roasted eggplant slices on top of the pizza dough.
- Spread the spiced tomato mixture evenly over the eggplant, and if desired, sprinkle vegan cheese on top.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with fresh parsley, slice, and serve hot.
