Eggplant and Tomato Burger

Ingredients

  • 1 medium eggplant - 250 grams
  • 1 medium tomato - 150 grams
  • 1 small onion - 100 grams
  • 2 cloves garlic - 6 grams
  • 1 teaspoon ground cumin - 2 grams
  • 1 teaspoon smoked paprika - 2 grams
  • 1/2 teaspoon salt - 3 grams
  • 1/4 teaspoon black pepper - 1 gram
  • 2 tablespoons olive oil - 30 ml
  • 2 whole wheat burger buns - 100 grams
  • 2 tablespoons tahini - 30 grams
  • Fresh cilantro for garnish - 10 grams

Steps

  1. Preheat the grill or a frying pan over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 10 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with paper towels.
  4. In a small bowl, mix olive oil, cumin, smoked paprika, salt, and pepper. Brush this mixture onto both sides of the eggplant slices.
  5. Grill the eggplant slices for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
  6. While the eggplant is grilling, finely chop the onion and garlic. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the onion until translucent. Add the garlic and cook for an additional minute.
  7. Dice the tomato and add it to the pan with the sautéed onion and garlic. Cook for about 5 minutes until the tomatoes soften. Season with salt and pepper to taste.
  8. Toast the whole wheat burger buns on the grill or in the pan until golden brown.
  9. To assemble the burger, spread 1 tablespoon of tahini on the bottom half of each bun. Place a grilled eggplant slice on top, followed by a spoonful of the tomato mixture.
  10. Garnish with fresh cilantro and top with the other half of the bun. Serve immediately.
