- Medjool dates - 100 grams, pitted
- Walnuts - 100 grams, chopped
- Chickpeas - 200 grams, cooked and drained
- Quinoa - 50 grams, cooked
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Whole grain burger buns - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
Steps
- In a food processor, combine the pitted Medjool dates, chopped walnuts, cooked chickpeas, cooked quinoa, finely chopped onion, minced garlic, cumin powder, coriander powder, paprika, salt, and black pepper. Pulse until the mixture is combined but still has some texture.
- Form the mixture into 2 patties and refrigerate for 10 minutes to help them hold their shape.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- Toast the whole grain burger buns lightly in a separate pan or toaster.
- Assemble the burgers by placing each patty on a bun and drizzling with tahini sauce. Add fresh parsley on top if desired and serve immediately.
