- Basmati rice - 150 grams
- Water - 300 milliliters
- Dates, pitted and chopped - 100 grams
- Mixed nuts (almonds, walnuts, pistachios) - 50 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 small
- Garlic, minced - 1 clove
- Cinnamon powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic to the pot and cook for another minute, stirring continuously.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the onion and garlic.
- Pour in 300 milliliters of water, and add the chopped dates, cinnamon, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, chop the mixed nuts into smaller pieces and lightly toast them in a dry skillet over medium heat for about 3-4 minutes until fragrant.
- Once the rice is done, fluff it with a fork and gently fold in the toasted nuts and chopped parsley.
- Serve warm, garnished with additional parsley if desired.
