Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Dates, pitted and chopped - 100 grams
  • Mixed nuts (almonds, walnuts, pistachios) - 50 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 small
  • Garlic, minced - 1 clove
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic to the pot and cook for another minute, stirring continuously.
  4. Drain the soaked rice and add it to the pot, stirring gently to combine with the onion and garlic.
  5. Pour in 300 milliliters of water, and add the chopped dates, cinnamon, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is tender and the water is absorbed.
  7. While the rice is cooking, chop the mixed nuts into smaller pieces and lightly toast them in a dry skillet over medium heat for about 3-4 minutes until fragrant.
  8. Once the rice is done, fluff it with a fork and gently fold in the toasted nuts and chopped parsley.
  9. Serve warm, garnished with additional parsley if desired.
