- Couscous - 150 grams
- Water - 250 ml
- Dates - 100 grams, pitted and chopped
- Almonds - 50 grams, slivered or chopped
- Olive oil - 2 tablespoons
- Cinnamon - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a medium saucepan, bring 250 ml of water to a boil and add 1/2 teaspoon of salt.
- Once boiling, remove from heat and stir in the couscous, ensuring it is evenly distributed.
- Cover the saucepan and let it sit for about 5 minutes, or until the couscous has absorbed all the water.
- In a skillet over medium heat, add 2 tablespoons of olive oil and the slivered almonds. Toast for about 3-4 minutes until golden brown, stirring frequently.
- Add the chopped dates, cinnamon, and cumin to the skillet. Cook for an additional 2-3 minutes until the dates soften slightly.
- Fluff the couscous with a fork and then combine it with the almond and date mixture in the skillet.
- Add the chopped parsley and lemon juice, mixing everything together until well combined.
