Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Dates - 100 grams, pitted and chopped
  • Almonds - 50 grams, slivered or chopped
  • Olive oil - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium saucepan, bring 250 ml of water to a boil and add 1/2 teaspoon of salt.
  2. Once boiling, remove from heat and stir in the couscous, ensuring it is evenly distributed.
  3. Cover the saucepan and let it sit for about 5 minutes, or until the couscous has absorbed all the water.
  4. In a skillet over medium heat, add 2 tablespoons of olive oil and the slivered almonds. Toast for about 3-4 minutes until golden brown, stirring frequently.
  5. Add the chopped dates, cinnamon, and cumin to the skillet. Cook for an additional 2-3 minutes until the dates soften slightly.
  6. Fluff the couscous with a fork and then combine it with the almond and date mixture in the skillet.
  7. Add the chopped parsley and lemon juice, mixing everything together until well combined.
