  • Medjool dates - 100 grams, pitted and chopped
  • Almond flour - 100 grams
  • All-purpose flour - 50 grams
  • Sugar - 50 grams
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Almonds - 30 grams, sliced (for topping)
  • Honey - 2 tablespoons (for drizzling)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small round cake pan.
  2. In a mixing bowl, combine the almond flour, all-purpose flour, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk the eggs and sugar together until pale and frothy.
  4. Add the chopped dates and vanilla extract to the egg mixture, stirring well to combine.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Sprinkle sliced almonds over the top of the batter.
