Ingredients

  • Cauliflower - 300 grams (about 1/2 medium head, grated)
  • Almond flour - 75 grams (3/4 cup)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chickpea flour - 30 grams (1/4 cup)
  • Water - 60 ml (1/4 cup)
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 150 grams (halved)
  • Red bell pepper - 1 medium (sliced)
  • Red onion - 1/2 medium (sliced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Tahini - 30 grams (2 tablespoons)
  • Lemon juice - 1 tablespoon
  • Water (for tahini sauce) - 30 ml (2 tablespoons)

Steps

  1. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated cauliflower, almond flour, ground cumin, ground coriander, salt, black pepper, garlic powder, and chickpea flour.
  3. Add the water and olive oil to the mixture, stirring until a dough forms.
  4. Transfer the dough to the prepared baking sheet and shape it into a round pizza crust, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until it is golden brown and firm to the touch.
  6. While the crust is baking, prepare the toppings by slicing the cherry tomatoes, red bell pepper, and red onion.
  7. In a small bowl, mix the tahini, lemon juice, and water to create a smooth sauce.
  8. Once the crust is done, remove it from the oven and evenly distribute the sliced vegetables on top.
