- Zucchini - 1 small, sliced
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Vegan cheese - 100 grams (optional)
Steps
- Preheat your oven to 220°C (428°F).
- Roll out the pizza dough on a lightly floured surface to your desired thickness.
- Transfer the dough to a baking sheet lined with parchment paper.
- In a skillet, heat the olive oil over medium heat. Add the red onion and sauté for about 2 minutes until it begins to soften.
- Add the bell pepper, zucchini, and garlic to the skillet and cook for another 3-4 minutes, stirring occasionally.
- Stir in the cherry tomatoes, ground cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until everything is well combined and heated through.
- Spread the vegetable mixture evenly over the prepared pizza dough.
- If using, sprinkle the vegan cheese over the top of the vegetables.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
