  • Zucchini - 1 small, sliced
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Vegan cheese - 100 grams (optional)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the dough to a baking sheet lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat. Add the red onion and sauté for about 2 minutes until it begins to soften.
  5. Add the bell pepper, zucchini, and garlic to the skillet and cook for another 3-4 minutes, stirring occasionally.
  6. Stir in the cherry tomatoes, ground cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until everything is well combined and heated through.
  7. Spread the vegetable mixture evenly over the prepared pizza dough.
