Ingredients

  • Carrots - 500 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped) for garnish
  • Lemon - 1 (for juice)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the carrots and cut them into evenly sized sticks, about 1 cm thick.
  3. In a large bowl, combine the olive oil, ground cumin, garlic powder, paprika, salt, and black pepper.
  4. Add the carrot sticks to the bowl and toss until they are well coated with the spice mixture.
  5. Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
  7. Remove from the oven and squeeze fresh lemon juice over the roasted carrots.
  8. Garnish with chopped fresh parsley before serving.
