- Carrots - 500 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped) for garnish
- Lemon - 1 (for juice)
Steps
- Preheat the oven to 200°C (400°F).
- Peel the carrots and cut them into evenly sized sticks, about 1 cm thick.
- In a large bowl, combine the olive oil, ground cumin, garlic powder, paprika, salt, and black pepper.
- Add the carrot sticks to the bowl and toss until they are well coated with the spice mixture.
- Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and squeeze fresh lemon juice over the roasted carrots.
