- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (soaked in water if wooden)
Steps
- In a dry skillet, toast the cumin and coriander seeds over medium heat for 2-3 minutes until fragrant, then grind them in a spice grinder or mortar and pestle.
- In a mixing bowl, combine the ground spices, paprika, minced garlic, chopped parsley, olive oil, lemon juice, salt, and black pepper to form a marinade.
- Add the cubed lamb to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
- Preheat your grill or BBQ to medium-high heat.
- Thread the marinated lamb onto the skewers, leaving a little space between each piece for even cooking.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until cooked to your desired level of doneness.
