Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Cumin seeds - 2 teaspoons
  • Coriander seeds - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a dry skillet, toast the cumin and coriander seeds over medium heat for 2-3 minutes until fragrant, then grind them in a spice grinder or mortar and pestle.
  2. In a mixing bowl, combine the ground spices, paprika, minced garlic, chopped parsley, olive oil, lemon juice, salt, and black pepper to form a marinade.
  3. Add the cubed lamb to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated lamb onto the skewers, leaving a little space between each piece for even cooking.
  6. Grill the kebabs for about 10-12 minutes, turning occasionally, until cooked to your desired level of doneness.
