- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken or beef broth - 400 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges (for serving)
Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic, diced carrot, and zucchini to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Add the cubed meat to the pot, along with cinnamon, cumin, paprika, salt, and black pepper. Brown the meat on all sides, about 5-7 minutes.
- Pour in the chicken or beef broth, bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes until the meat is tender.
- Meanwhile, prepare the couscous according to package instructions. Typically, bring 250 ml of water to a boil, add the couscous, cover, and let it sit for about 5 minutes until fluffy.
- Once the meat is tender, remove from heat and stir in chopped parsley.
- Serve the meat mixture over the couscous, garnishing with lemon wedges on the side.
