  • Lamb or beef (halal) - 300 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken or beef broth - 400 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, diced carrot, and zucchini to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Add the cubed meat to the pot, along with cinnamon, cumin, paprika, salt, and black pepper. Brown the meat on all sides, about 5-7 minutes.
  4. Pour in the chicken or beef broth, bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes until the meat is tender.
  5. Meanwhile, prepare the couscous according to package instructions. Typically, bring 250 ml of water to a boil, add the couscous, cover, and let it sit for about 5 minutes until fluffy.
  6. Once the meat is tender, remove from heat and stir in chopped parsley.
  7. Serve the meat mixture over the couscous, garnishing with lemon wedges on the side.
