  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Yellow bell pepper - 1 medium, chopped
  • Red onion - 1 medium, cut into wedges

  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon

Steps

  1. Prepare the couscous by bringing the vegetable broth to a boil in a medium saucepan.

  5. Add olive oil, minced garlic, ground cumin, paprika, salt, and black pepper to the vegetables and toss to coat evenly.
  6. Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
  7. Fluff the couscous with a fork and add a drizzle of olive oil if desired.
  8. Serve the grilled vegetables over the couscous and garnish with fresh parsley.
