- Lamb or beef skewers - 300 grams (cut into bite-sized pieces)
- Fresh parsley - 2 tablespoons (chopped)
- Red onion - 1 medium (cut into wedges)
- Bell pepper - 1 medium (cut into chunks)
Steps
- Preheat the grill to medium-high heat.
- In a food processor, pulse the cauliflower until it resembles couscous or rice. Set aside.
- In a bowl, mix olive oil, cumin, coriander, paprika, salt, black pepper, garlic powder, and lemon juice to create a marinade.
- Add the meat pieces to the marinade, ensuring they are well coated. Allow to marinate for at least 15 minutes.
- Thread the marinated meat, red onion wedges, and bell pepper chunks onto skewers.
