  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Lamb or beef skewers - 300 grams (cut into bite-sized pieces)
  • Fresh parsley - 2 tablespoons (chopped)
  • Red onion - 1 medium (cut into wedges)
  • Bell pepper - 1 medium (cut into chunks)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a food processor, pulse the cauliflower until it resembles couscous or rice. Set aside.
  3. In a bowl, mix olive oil, cumin, coriander, paprika, salt, black pepper, garlic powder, and lemon juice to create a marinade.
  4. Add the meat pieces to the marinade, ensuring they are well coated. Allow to marinate for at least 15 minutes.
  5. Thread the marinated meat, red onion wedges, and bell pepper chunks onto skewers.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the meat is cooked to your liking.
