- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Carrot (diced) - 1 medium
- Red bell pepper (diced) - 1 medium
- Zucchini (diced) - 1 medium
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the diced carrot, red bell pepper, and zucchini to the saucepan. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, ground coriander, cinnamon, salt, and black pepper, cooking for an additional minute until fragrant.
- Add the drained chickpeas and vegetable broth to the saucepan, bringing the mixture to a gentle simmer.
- Once simmering, remove from heat and stir in the couscous. Cover the saucepan and let it sit for 5 minutes to allow the couscous to absorb the broth.
- After 5 minutes, fluff the couscous with a fork and drizzle with the remaining tablespoon of olive oil and lemon juice. Mix in the chopped parsley.
- Serve warm, garnished with additional parsley if desired.
