  • Couscous - 150 grams
  • Chickpeas (canned, drained) - 240 grams
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Carrot (diced) - 1 medium
  • Red bell pepper (diced) - 1 medium
  • Zucchini (diced) - 1 medium
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 3-4 minutes.
  2. Add the diced carrot, red bell pepper, and zucchini to the saucepan. Cook for another 5-7 minutes until the vegetables are tender.
  3. Stir in the ground cumin, ground coriander, cinnamon, salt, and black pepper, cooking for an additional minute until fragrant.
  4. Add the drained chickpeas and vegetable broth to the saucepan, bringing the mixture to a gentle simmer.
  5. Once simmering, remove from heat and stir in the couscous. Cover the saucepan and let it sit for 5 minutes to allow the couscous to absorb the broth.
  6. After 5 minutes, fluff the couscous with a fork and drizzle with the remaining tablespoon of olive oil and lemon juice. Mix in the chopped parsley.
  7. Serve warm, garnished with additional parsley if desired.
