- Chicken breast - 300 grams
- Couscous - 150 grams
- Chicken broth - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced chicken breast to the skillet, season with cumin, cinnamon, paprika, salt, and black pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes.
- Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 5-7 minutes until the vegetables are tender.
- In a separate pot, bring the chicken broth to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and mix in the lemon juice and chopped parsley.
- Serve the chicken and vegetable mixture over the couscous and garnish with extra parsley if desired.
