Ingredients

  • Chicken breast - 300 grams
  • Couscous - 150 grams
  • Chicken broth - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the diced chicken breast to the skillet, season with cumin, cinnamon, paprika, salt, and black pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes.
  3. Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 5-7 minutes until the vegetables are tender.
  4. In a separate pot, bring the chicken broth to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  5. Fluff the couscous with a fork and mix in the lemon juice and chopped parsley.
  6. Serve the chicken and vegetable mixture over the couscous and garnish with extra parsley if desired.
