  • Vegetable broth - 300 milliliters
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Peel the carrots and cut them into thin slices or small cubes.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, cinnamon, salt, and black pepper to the pan, and cook for an additional 2 minutes until fragrant.
  4. Stir in the carrots and vegetable broth, bringing the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for about 10 minutes, or until the carrots are tender.
