- Vegetable broth - 300 milliliters
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Peel the carrots and cut them into thin slices or small cubes.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, salt, and black pepper to the pan, and cook for an additional 2 minutes until fragrant.
- Stir in the carrots and vegetable broth, bringing the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 10 minutes, or until the carrots are tender.
- Add the couscous to the saucepan, stir gently, and cover it again. Remove from heat and let it sit for 5 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork, garnish with chopped parsley, and serve warm.
