  • Couscous - 150 grams
  • Almonds (sliced) - 50 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Vegetable broth - 300 ml
  • Raisins - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Stir in the sliced almonds and cook for another 2-3 minutes until they are lightly toasted.
  3. Add the raisins, cinnamon, cumin, salt, and black pepper to the saucepan, mixing well.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, remove from heat.
  5. Stir in the couscous, cover the saucepan, and let it sit for 5 minutes to allow the couscous to absorb the liquid.
  6. Fluff the couscous with a fork and stir in the fresh parsley and lemon juice before serving.
