- Vegetable broth - 300 ml
- Raisins - 30 grams
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the sliced almonds and cook for another 2-3 minutes until they are lightly toasted.
- Add the raisins, cinnamon, cumin, salt, and black pepper to the saucepan, mixing well.
- Pour in the vegetable broth and bring to a boil. Once boiling, remove from heat.
- Stir in the couscous, cover the saucepan, and let it sit for 5 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork and stir in the fresh parsley and lemon juice before serving.
