Ingredients
- couscous - 100 grams
- water - 150 milliliters
- chickpeas (canned) - 200 grams, drained and rinsed
- carrot - 1 medium, grated
- red bell pepper - 1/2, finely chopped
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- cumin powder - 1 teaspoon
- coriander powder - 1 teaspoon
- paprika - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- egg - 1, beaten
- breadcrumbs - 50 grams
- olive oil - 2 tablespoons
- salt - to taste
- black pepper - to taste
- whole grain burger buns - 2
- lettuce leaves - for serving
- sliced tomato - for serving
- tahini sauce - for drizzling
Steps
- In a small saucepan, bring 150ml of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.
- Add the fluffed couscous, grated carrot, chopped red bell pepper, red onion, minced garlic, cumin, coriander, paprika, and parsley to the mashed chickpeas. Mix well.
- Stir in the beaten egg and breadcrumbs until everything is well combined. Season with salt and black pepper to taste.
- Form the mixture into 2 equal patties. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy. Add a bit more oil if needed.
- While the patties are cooking, toast the burger buns lightly in the skillet.
- Assemble the burgers by placing each patty on a bun, adding lettuce, sliced tomato, and drizzling with tahini sauce.
