Ingredients

  • couscous - 100 grams
  • water - 150 milliliters
  • chickpeas (canned) - 200 grams, drained and rinsed
  • carrot - 1 medium, grated
  • red bell pepper - 1/2, finely chopped
  • red onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • cumin powder - 1 teaspoon
  • coriander powder - 1 teaspoon
  • paprika - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • egg - 1, beaten
  • breadcrumbs - 50 grams
  • olive oil - 2 tablespoons
  • salt - to taste
  • black pepper - to taste
  • whole grain burger buns - 2
  • lettuce leaves - for serving
  • sliced tomato - for serving
  • tahini sauce - for drizzling

Steps

  1. In a small saucepan, bring 150ml of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.
  3. Add the fluffed couscous, grated carrot, chopped red bell pepper, red onion, minced garlic, cumin, coriander, paprika, and parsley to the mashed chickpeas. Mix well.
  4. Stir in the beaten egg and breadcrumbs until everything is well combined. Season with salt and black pepper to taste.
  5. Form the mixture into 2 equal patties. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  6. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy. Add a bit more oil if needed.
  7. While the patties are cooking, toast the burger buns lightly in the skillet.
  8. Assemble the burgers by placing each patty on a bun, adding lettuce, sliced tomato, and drizzling with tahini sauce.
