Ingredients

  • Pizza dough - 200 grams
  • Couscous - 100 grams
  • Vegetable broth - 150 ml
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a saucepan, bring the vegetable broth to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red bell pepper, zucchini, and red onion, and sauté for about 5-7 minutes until softened.
  4. Stir in the cherry tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper, and cook for an additional 3-4 minutes.
  5. In a mixing bowl, combine the cooked couscous with the sautéed vegetables and mix well.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  7. Spread the couscous and vegetable mixture evenly over the dough. Drizzle with the remaining tablespoon of olive oil and sprinkle crumbled feta cheese on top.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
  9. Remove from the oven, garnish with fresh parsley, slice, and serve warm.
