- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (428°F).
- In a saucepan, bring the vegetable broth to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red bell pepper, zucchini, and red onion, and sauté for about 5-7 minutes until softened.
- Stir in the cherry tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper, and cook for an additional 3-4 minutes.
- In a mixing bowl, combine the cooked couscous with the sautéed vegetables and mix well.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- Spread the couscous and vegetable mixture evenly over the dough. Drizzle with the remaining tablespoon of olive oil and sprinkle crumbled feta cheese on top.
