Ingredients

  • Couscous - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 2 medium, thinly sliced
  • Raisins - 50 grams
  • Cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped parsley - 2 tablespoons (for garnish)

Steps

  1. In a saucepan, bring 300 milliliters of water to a boil. Add a pinch of salt and stir in the couscous. Remove from heat, cover, and let it sit for 5 minutes to absorb the water.
  2. While the couscous is resting, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they become soft and caramelized, about 10-12 minutes.
  3. Stir in the raisins, cinnamon, ground cumin, ground ginger, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld and the raisins to plump up.
  4. Fluff the couscous with a fork, then transfer it to serving plates. Top with the caramelized onion and raisin mixture.
  5. Garnish with chopped parsley and serve warm.
