Ingredients

  • Red bell peppers - 2 large
  • Gluten-free couscous - 150 grams
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas - 120 grams, canned and drained
  • Dried apricots - 50 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill or BBQ to medium heat.
  2. Cut the tops off the red bell peppers and remove the seeds and membranes.
  3. In a saucepan, bring the vegetable broth to a boil and add the gluten-free couscous. Remove from heat, cover, and let it sit for about 5 minutes until the couscous is fluffy.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  5. Add the minced garlic, cumin, coriander, and paprika to the skillet. Cook for an additional 1-2 minutes until fragrant.
  6. Stir in the drained chickpeas, chopped dried apricots, and cooked couscous. Mix well and season with salt and black pepper to taste.
  7. Remove from heat and fold in the fresh parsley.
  8. Stuff the bell peppers with the couscous mixture, packing it in gently.
  9. Wrap each stuffed pepper in aluminum foil and place them on the grill. Cook for about 20-25 minutes until the peppers are tender.
  10. Remove from the grill, let cool slightly, then unwrap and serve warm.
