Ingredients
- Red bell peppers - 2 large
- Gluten-free couscous - 150 grams
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Chickpeas - 120 grams, canned and drained
- Dried apricots - 50 grams, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the grill or BBQ to medium heat.
- Cut the tops off the red bell peppers and remove the seeds and membranes.
- In a saucepan, bring the vegetable broth to a boil and add the gluten-free couscous. Remove from heat, cover, and let it sit for about 5 minutes until the couscous is fluffy.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, cumin, coriander, and paprika to the skillet. Cook for an additional 1-2 minutes until fragrant.
- Stir in the drained chickpeas, chopped dried apricots, and cooked couscous. Mix well and season with salt and black pepper to taste.
- Remove from heat and fold in the fresh parsley.
- Stuff the bell peppers with the couscous mixture, packing it in gently.
- Wrap each stuffed pepper in aluminum foil and place them on the grill. Cook for about 20-25 minutes until the peppers are tender.
- Remove from the grill, let cool slightly, then unwrap and serve warm.
