Steps
- In a small saucepan, bring the chicken broth to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a skillet, heat the olive oil over medium heat. Add the chopped red onion and garlic, sautéing until soft, about 3-4 minutes.
- Stir in the cumin, coriander, and paprika, cooking for an additional minute until fragrant.
- In a large bowl, combine the ground beef, cooked couscous, sautéed onion and garlic mixture, parsley, salt, pepper, and crumbled feta cheese. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty, making a slight indentation in the center to hold the filling.
- Preheat a grill or skillet over medium-high heat. Cook the patties for about 5-6 minutes on each side, or until cooked to your desired doneness.
- Serve the burgers wrapped in romaine lettuce leaves with tomato slices and any additional toppings you prefer.
