  • Couscous - 100 grams
  • Vegetable broth - 500 milliliters
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Add the diced carrot, zucchini, and red bell pepper to the pot, stirring occasionally for about 5 minutes.
  3. Stir in the diced tomato, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes soften.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
  5. Add the couscous to the pot, stirring well. Cover and remove from heat, allowing the couscous to absorb the liquid for about 5 minutes.
  6. Once the couscous is fluffy, give it a gentle stir. Serve hot, garnished with fresh parsley.
