- Vegetable broth - 500 milliliters
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the diced carrot, zucchini, and red bell pepper to the pot, stirring occasionally for about 5 minutes.
- Stir in the diced tomato, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes soften.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
- Add the couscous to the pot, stirring well. Cover and remove from heat, allowing the couscous to absorb the liquid for about 5 minutes.
- Once the couscous is fluffy, give it a gentle stir. Serve hot, garnished with fresh parsley.
