- Couscous - 120 grams
- Boiling water - 150 ml
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1, diced
- Red onion - 1/4, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cinnamon - 1/4 teaspoon
- Chickpeas - 100 grams, drained and rinsed
Steps
- In a bowl, combine the couscous with boiling water, cover, and let it sit for 5 minutes until the water is absorbed.
- Fluff the couscous with a fork and let it cool for a few minutes.
- In a large mixing bowl, whisk together olive oil, lemon juice, salt, black pepper, and cinnamon.
- Add the cooled couscous to the bowl along with cherry tomatoes, cucumber, red bell pepper, red onion, chickpeas, parsley, and mint.
- Toss everything together gently until well combined.
- Serve the salad chilled or at room temperature, garnished with extra herbs if desired.
