Ingredients

  • Couscous - 120 grams
  • Boiling water - 150 ml
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1/4, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Chickpeas - 100 grams, drained and rinsed

Steps

  1. In a bowl, combine the couscous with boiling water, cover, and let it sit for 5 minutes until the water is absorbed.
  2. Fluff the couscous with a fork and let it cool for a few minutes.
  3. In a large mixing bowl, whisk together olive oil, lemon juice, salt, black pepper, and cinnamon.
  4. Add the cooled couscous to the bowl along with cherry tomatoes, cucumber, red bell pepper, red onion, chickpeas, parsley, and mint.
  5. Toss everything together gently until well combined.
  6. Serve the salad chilled or at room temperature, garnished with extra herbs if desired.
