Ingredients

  • Couscous - 150 grams
  • Chickpeas (canned, drained) - 240 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, zucchini, and red bell pepper to the pot. Cook for another 5-7 minutes until the vegetables are slightly softened.
  3. Stir in the chickpeas, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for 2 minutes to allow the spices to bloom.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Reduce the heat to low and cover the pot. Let it simmer for 10 minutes.
  5. After 10 minutes, remove the lid and add the couscous. Stir well, then cover the pot again and remove it from heat. Allow it to sit for 5 minutes.
  6. Fluff the couscous with a fork, mixing in the vegetables and chickpeas. Adjust seasoning if necessary.
  7. Serve hot, garnished with chopped fresh parsley.
