Ingredients

  • Couscous - 150 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100 grams, cooked
  • Tomato sauce - 100 milliliters
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, bring 250 milliliters of water to a boil. Once boiling, add 150 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced red bell pepper, 1 diced zucchini, and 1 small diced red onion. Sauté for about 5-7 minutes until the vegetables are tender.
  4. Add 2 minced garlic cloves, 1 teaspoon of ground cumin, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet. Stir and cook for an additional 2 minutes.
  5. In a mixing bowl, combine the fluffed couscous, sautéed vegetables, 100 grams of cooked chickpeas, and 100 milliliters of tomato sauce. Mix well to combine all ingredients.
  6. Transfer the couscous mixture into a greased baking dish. Top with crumbled feta cheese.
  7. Bake in the preheated oven for 15-20 minutes until heated through and the edges start to crisp.
  8. Remove from the oven and garnish with 2 tablespoons of chopped fresh parsley before serving.
