Ingredients
- Couscous - 150 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, cooked
- Tomato sauce - 100 milliliters
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a saucepan, bring 250 milliliters of water to a boil. Once boiling, add 150 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced red bell pepper, 1 diced zucchini, and 1 small diced red onion. Sauté for about 5-7 minutes until the vegetables are tender.
- Add 2 minced garlic cloves, 1 teaspoon of ground cumin, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet. Stir and cook for an additional 2 minutes.
- In a mixing bowl, combine the fluffed couscous, sautéed vegetables, 100 grams of cooked chickpeas, and 100 milliliters of tomato sauce. Mix well to combine all ingredients.
- Transfer the couscous mixture into a greased baking dish. Top with crumbled feta cheese.
- Bake in the preheated oven for 15-20 minutes until heated through and the edges start to crisp.
- Remove from the oven and garnish with 2 tablespoons of chopped fresh parsley before serving.
