Ingredients
- couscous - 100 grams
- water - 200 milliliters
- olive oil - 2 tablespoons
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- smoked paprika - 1/2 teaspoon
- chickpeas (canned) - 100 grams, drained and rinsed
- zucchini - 1 small, thinly sliced
- bell pepper (red or yellow) - 1 small, diced
- red onion - 1 small, thinly sliced
- tomato sauce - 100 grams
- feta cheese - 50 grams, crumbled
- fresh parsley - 2 tablespoons, chopped
- cumin - 1/4 teaspoon
- coriander - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a saucepan, bring 200 milliliters of water to a boil. Add 100 grams of couscous, 1/2 teaspoon salt, and 1 tablespoon of olive oil. Stir, cover, and let it sit for 5 minutes.
- Fluff the couscous with a fork and mix in 1/4 teaspoon black pepper, 1/2 teaspoon smoked paprika, and 1/4 teaspoon cumin.
- Line a baking sheet with parchment paper. Spread the couscous mixture onto the baking sheet, forming a round pizza shape about 1 cm thick.
- Bake the couscous crust in the preheated oven for 15 minutes until golden and firm.
- Meanwhile, in a bowl, combine the drained chickpeas, diced bell pepper, sliced zucchini, sliced red onion, 100 grams of tomato sauce, 1 tablespoon of olive oil, 1/4 teaspoon coriander, and mix well.
- Remove the couscous crust from the oven and spread the vegetable mixture evenly over the top.
- Sprinkle crumbled feta cheese over the vegetable topping.
- Return to the oven and bake for an additional 10 minutes until the vegetables are tender and the cheese is slightly golden.
- Garnish with fresh parsley before slicing and serving.
