Ingredients

  • couscous - 100 grams
  • water - 200 milliliters
  • olive oil - 2 tablespoons
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • smoked paprika - 1/2 teaspoon
  • chickpeas (canned) - 100 grams, drained and rinsed
  • zucchini - 1 small, thinly sliced
  • bell pepper (red or yellow) - 1 small, diced
  • red onion - 1 small, thinly sliced
  • tomato sauce - 100 grams
  • feta cheese - 50 grams, crumbled
  • fresh parsley - 2 tablespoons, chopped
  • cumin - 1/4 teaspoon
  • coriander - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a saucepan, bring 200 milliliters of water to a boil. Add 100 grams of couscous, 1/2 teaspoon salt, and 1 tablespoon of olive oil. Stir, cover, and let it sit for 5 minutes.
  3. Fluff the couscous with a fork and mix in 1/4 teaspoon black pepper, 1/2 teaspoon smoked paprika, and 1/4 teaspoon cumin.
  4. Line a baking sheet with parchment paper. Spread the couscous mixture onto the baking sheet, forming a round pizza shape about 1 cm thick.
  5. Bake the couscous crust in the preheated oven for 15 minutes until golden and firm.
  6. Meanwhile, in a bowl, combine the drained chickpeas, diced bell pepper, sliced zucchini, sliced red onion, 100 grams of tomato sauce, 1 tablespoon of olive oil, 1/4 teaspoon coriander, and mix well.
  7. Remove the couscous crust from the oven and spread the vegetable mixture evenly over the top.
  8. Sprinkle crumbled feta cheese over the vegetable topping.
  9. Return to the oven and bake for an additional 10 minutes until the vegetables are tender and the cheese is slightly golden.
  10. Garnish with fresh parsley before slicing and serving.
