- Zucchini - 1, diced
- Carrot - 1, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a saucepan, bring the vegetable broth to a boil.
- Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper, zucchini, and carrot to the skillet, and cook for about 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
- Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix well to combine.
- Drizzle with lemon juice and sprinkle with fresh parsley before serving.
