  • Couscous - 150 grams
  • Vegetable broth - 400 ml

  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the diced red bell pepper, zucchini, and carrot to the skillet, and cook for about 5-7 minutes until the vegetables are tender.
  5. Stir in the ground cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
  6. Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix well to combine.
  7. Drizzle with lemon juice and sprinkle with fresh parsley before serving.
