- Couscous - 150 grams
- Lamb (shoulder or leg) - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Dried apricots - 50 grams, chopped
- Almonds - 30 grams, toasted
- Ras el Hanout spice blend - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
- Fresh coriander - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and lamb cubes to the pot. Brown the lamb on all sides for about 5-7 minutes.
- Stir in the diced carrot, chopped dried apricots, Ras el Hanout, cinnamon, salt, and black pepper. Mix well to coat the lamb with the spices.
- Pour in the water and bring to a boil. Reduce the heat, cover, and let it simmer for 30-35 minutes until the lamb is tender.
- While the lamb is cooking, prepare the couscous. In a separate bowl, pour 200 ml of boiling water over the couscous, cover, and let it sit for about 5 minutes. Fluff with a fork once done.
- Once the lamb is tender, check the seasoning and adjust if necessary. Serve the lamb mixture over a bed of couscous.
- Garnish with toasted almonds and fresh coriander before serving.
