Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice or couscous grains.
  4. In a large mixing bowl, combine the cauliflower 'couscous' with olive oil, minced garlic, cumin, paprika, coriander, salt, and black pepper. Mix well.
  5. Spread the seasoned cauliflower mixture onto a baking sheet lined with parchment paper and bake for 15-20 minutes, or until tender and slightly golden.
  6. While the cauliflower is baking, heat a skillet over medium heat and add a bit of olive oil.
  7. Add the diced red bell pepper and zucchini to the skillet and sauté for about 5-7 minutes until softened.
  8. Once the cauliflower is done baking, combine it with the sautéed vegetables in the skillet.
  9. Stir in the fresh parsley and lemon juice, mixing until everything is well incorporated.
  10. Serve warm, topped with crumbled feta cheese if desired.
