- Cauliflower - 400 grams

- Paprika - 1 teaspoon
- Coriander - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 200°C (390°F).
- Remove the leaves and stem from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice or couscous grains.
- In a large mixing bowl, combine the cauliflower 'couscous' with olive oil, minced garlic, cumin, paprika, coriander, salt, and black pepper. Mix well.
- Spread the seasoned cauliflower mixture onto a baking sheet lined with parchment paper and bake for 15-20 minutes, or until tender and slightly golden.
- While the cauliflower is baking, heat a skillet over medium heat and add a bit of olive oil.
- Add the diced red bell pepper and zucchini to the skillet and sauté for about 5-7 minutes until softened.
- Once the cauliflower is done baking, combine it with the sautéed vegetables in the skillet.
- Stir in the fresh parsley and lemon juice, mixing until everything is well incorporated.
- Serve warm, topped with crumbled feta cheese if desired.
