Ingredients

  • Quinoa - 100 grams
  • Vegetable broth - 250 ml
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Chickpeas - 100 grams, cooked
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the chopped red onion and garlic, sauté for 2-3 minutes until softened.
  4. Add the diced red bell pepper, carrot, and zucchini to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
  5. Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, salt, and pepper. Cook for another 2-3 minutes to heat through.
  6. Once the quinoa is done, fluff it with a fork and add it to the skillet with the vegetables. Mix well to combine.
  7. Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if needed.
  8. Serve warm, garnished with additional parsley if desired.
