- Carrot (diced) - 1 medium
- Bell pepper (diced) - 1 medium
- Zucchini (diced) - 1 small
- Chickpeas (cooked) - 100 grams
- Chicken broth - 400 ml
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - for garnish
Steps
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced carrot, bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables are tender.
- Season the chicken thighs with salt, black pepper, cumin, cinnamon, and turmeric. Add them to the pan and brown on all sides for about 5-6 minutes.
- Pour in the chicken broth and bring to a gentle simmer. Cover and cook for about 15 minutes until the chicken is cooked through.
- Once the chicken is done, remove it from the pan and let it rest for a few minutes, then shred it into bite-sized pieces.
- Add the gluten-free couscous and chickpeas to the pan with the broth and vegetables. Stir well, cover, and remove from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork, then stir in the shredded chicken. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
