  • Chicken thighs (boneless, skinless) - 300 grams

  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Carrot (diced) - 1 medium
  • Bell pepper (diced) - 1 medium
  • Zucchini (diced) - 1 small
  • Chickpeas (cooked) - 100 grams
  • Chicken broth - 400 ml
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced carrot, bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables are tender.
  4. Season the chicken thighs with salt, black pepper, cumin, cinnamon, and turmeric. Add them to the pan and brown on all sides for about 5-6 minutes.
  5. Pour in the chicken broth and bring to a gentle simmer. Cover and cook for about 15 minutes until the chicken is cooked through.
  6. Once the chicken is done, remove it from the pan and let it rest for a few minutes, then shred it into bite-sized pieces.
  7. Add the gluten-free couscous and chickpeas to the pan with the broth and vegetables. Stir well, cover, and remove from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.
  8. Fluff the couscous with a fork, then stir in the shredded chicken. Adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
